Containing about as much protein as a sirloin steak, and a generous helping of essential amino acids, Seitan is quite the wonderfood. Pronounced 'Sey-tahn' (not 'Satan'!), Seitan is a wheat gluten and wonderfully good for you. With a gentle kick of chilli this sauce is perfect for a devilishly delicious (and non-meaty!) pasta dish.
